and its pretty sweet.
This weekend was rather busy. Little brother #1 had his 20th birthday, and little brother #2 had a race. On top of that, I had gardening, spring cleaning, grocery shopping, blogging, and laundry that needed to get done. Crazy. My main goal this weekend was to bring the summer clothes down from the attic because its finally that time of year!!! I love getting my summer clothes out. They're so colorful and comfy! Anyway, inspiration hit when I tried on a pair of linen trousers I bought when I was thirteen....and they fit! Not in a Cinderella's-stepsisters-and-the-glass-slipper kind of fit; they actually fit comfortably.
Last year, I was ten pounds heavier, riddled with stress from my undergrad, and therefore very puffy. Thanks to diet, running, going dairy-free, dance, yoga, and lots of God-given peace, I'm smaller and no longer puffy. Well, now it is summertime, and I have some pretty clothes to wear.
So how is a girl gonna enjoy her sweets (everyday) and stay in those small trousers? Lemon frozen yogurt (dairy-free, of course).
Can you believe how gorgeous that is? I got the inspiration for the recipe when the family went out for frozen yogurt to celebrate little brother #1's birthday. They had lemon-honey greek frozen yogurt, and I thought "I CAN DO THAT!" So I did that.
Here you go!
1 14oz container of lite silken tofu
1 6oz container vanilla soy yogurt (I used Stonyfield O'Soy)
3 tbs. lemon juice
2-3 tbs. non dairy milk
1 tbs. maple syrup or agave nectar
1/16 tsp salt
1 tsp. lemon extract
1 tsp. vanilla
2 packets of stevia
1) In a blender, combine all ingredients and blend until really smooth. Pour mixture into a saucepan, and heat over medium heat until it thickens (about ten minutes). Be sure to stir constantly so it doesn't burn or stick. Take off heat, and let cool. Once the mixture is cool, pour into a plastic bag. Squeeze out the excess air, seal, and place in the freezer overnight.
2) Get your blender out!!! It's a good idea to let the mix thaw for about twenty minutes before blending, or have a few tablespoons of nondairy milk on hand to loosen the icy mix up. Place the frozen mix in the blender, and whip away. Serve with shredded coconut.
