Buona sera, ragazzi!!!!
Are you ready for some serious Italian?
My answer to that question is always YES!!! In college, I studied Italian language for two years, and fell in love. I mean, I am Italian (you didn't think “Bossalini” was French, did you?), and have grown up in a verrrrry Italian household. I’m 3rd generation American, so a lot of our family’s traditions stuck and are still practiced. Now post-grad, I am still madly in love with this language, this culture, and the food….of course.
So, this is for you all, my own creation. Orange and chocolate biscotti sounds decadent, and sure looks decadent, but its not! This recipe is low fat, dairy-free, and whole wheat. The slices are thick, and loaded with chocolate, and ridiculously simple to make.What is not to love? C'e perfetta!
Chocolate Orange Biscotti
Preheat oven to 350 degrees Farenheit.
2 cups whole wheat pastry flour (you can try gluten-free flour, but I can't vouch for it)
1 tsp. baking powder
¼ tsp. salt
¼ tsp. ground cinnamon
¾ cup sugar (I used evaporated cane juice, ‘cause its better for me)
2 large eggs
1 tsp. pure vanilla
1 tsp. orange extract or orange juice
Grated peel of one whole orange
1 cup chocolate chips
In a mixer or by hand, blend sugar, eggs, extracts, and peel. In a separate bowl, whisk flour, baking powder, cinnamon, and salt. Add dry to wet and mix well. Mix in chocolate chips.
On a greased cookie sheet, shape dough into an oblong shape, like the image below.
Bake 15 minutes, and remove from oven. Cut 12 slices on a diagonal, and turn each slice onto its side.
Bake for another 10 minutes.
Remove from oven, and flip each slice. Bake for another 10 minutes. Now you’re really done.

Here's a Question: Have you ever been to Italy? If so, which part did you visit? I've never been. My parents always wanted to go South instead of doing a Europe trip, and I'm too broke right now to go on my own...stinks.
